Pepper Chicken Quesadillas

Firstly, I would like to apologize for not being active and not posting recipes for more than a week now. I am now an Auntie of this cute little Boy and so, I am in Dubai to meet him. I won’t be posting that frequently now. I assure to be active once I am back home, In sha Allah. 

Quesadillas are always on our party menu. It is one of the lightest and easiest food to make. Lazy dinner always calls for Quesadillas in our house. I make Broccoli Quesadillas to Flat Bread Pizza Quesadillas. This was one of the unfried recipe I made for Iftar.

Pepper is one of my favorite spice. Everything tastes better with pepper, and that is the reason why I decided to try my hands on Pepper Chicken Quesadillas. The pepper chicken and seasoned carrot are a succulent delight when mixed with the melted cheese. Cut the quesadillas into wedges and serve with sour cream and salsa or just eat as it is.

Ingredients:
4 Small Tortillas
150 Grams Chicken Breast (Thinly Sliced)
1 Medium Carrot (Grated)
200 Grams Cheese
Salt to Taste
5-6Tbsp Pepper
1/2Tsp Tandoori Powder
4Tsp Mayonnaise
Dash of Hot Sauce

Method:
1)Season both side of the chicken with salt, pepper and tandoori powder.
2)In a medium non stick sauté pan,over medium high heat, melt the butter. Add the seasoned chicken and cook for a few minutes on each side until golden brown and cooked through. Remove chicken from the pan and cut into bite size pieces. Switch off the flame.
3)In the same pan add the grated carrot and give it a give stir.
The leftover seasoning from the pan will help season the grated carrot.
4)Spread 1Tsp mayonnaise with a dash of hot sauce on tortilla. Sprinkle some cheese on one half of the tortilla, and then top that with some grated carrot and the cooked chicken and a bit more cheese.
5)Fold it in half and place it on the grill pan, let it cook for about 3 minutes on each side or until the cheese is melted on both sides and it’s got nice golden brown ridges.
Continue with the remaining tortillas and dig in right away.
