Crispy Chicken Wraps

I know , I haven’t posted for a long now. Every time I plan to work according to a schedule, I fizzle. I have three pending recipes to type out after this one. But, I feel so lazy these days to type things out. I want to spend most of my time with Ahmedu. He’s such a pumpkin that I don’t want to leave him even for a second. And I’m able to post this now only because he’s sleeping. This little brat steals all the attention. He loves to spend time with his maasi just as I love to spend with him. I love to put him to sleep, but also want to wake him up the very next moment as it gets boring without him. I could go on and on and on and on and on and on and on and on writing about him BUT he just woke up. Ok BYE.

Anyways, here’s the recipe;IMG_1776IMG_1778Ingredients to make crispy chicken:
200 Grams Chicken Breast, cut into long thick strips
1 Egg, beaten + 2Tbsp Water
1/2 Cup Flour
Salt and Pepper to taste
1Tsp Garlic Powder
1/4 Cup Bread Crumbs
Oil for deep frying

Other ingredients:
5 Flour Tortilla, medium sized
1 Onion, medium sized, finely sliced
1 Tomato, medium sized, cut into small pieces
1 Bunch Lettuce, small
Salt and Pepper to taste
4 Tbsp Ranch Dressing
2 Tbsp Mayonnaise
1Tbsp Fresh Lemon Juice
5 Slices Cheddar Cheese

Method:
1)Combine the flour, garlic powder, salt and pepper in one bowl. Place the egg and water mixture into another. Put the breadcrumbs into a third bowl. Dredge chicken with seasoned flour and pass through egg mixture. Shake off excess egg. For an even crispier crust, dredge with flour again and pass through egg mixture one more time.
2)Now completely cover chicken breasts with breadcrumbs, pressing crumbs down gently if needed.
3)Heat oil in frying pan on medium-high heat. Cook for 4 minutes on each side (or until no longer pink inside) and set aside.
4)In a mixing bowl add in the ranch dressing, mayonnaise, lemon juice and salt and pepper. Stir until well combined. Now add in the onions and tomato and give it a quick stir and set aside.
5)For each wrap, place 2 Romaine lettuce leaves on flour tortilla. Top with 2-3 crispy chicken and sliced cheese. Drizzle 2Tbsp of onion and tomato mixture. Roll tortilla and serve. IMG_1780

Mutton Handi

Last Sunday, we sisters decided to give mamma off from the kitchen duties to spend more time with her darling grandson. I always wanted to try making restaurant style mutton gravy at home. I came up with this idea to make mutton gravy and my older sister executed it under my supervision ( of course 😉 ). IMG_3937Mutton Handi is a succulent and flavorful dinner to serve your family. The marinated meat and butter increases the taste of this meaty dish. It is a great dinner party recipe to impress friends and family.

Here’s the recipe;IMG_3939Ingredients for the marinate:
500 Grams Mutton
1/3 Cup Plain Yogurt
2Tbsp Chili Paste
1Tbsp Ginger Garlic Paste
1/2Tsp Whole Cumin
1/4Tsp Coriander Powder
1/4Tsp Cumin Powder
Salt and Pepper to taste
1/4 Cup Oil

Ingredients to make the gravy:
2 Onions, medium sized, sliced
1 Tomato, big, chopped
2Tbsp Oil
Pinch Of Turmeric Powder
2 Green Chili
Handful of Cashews
6 Garlic Cloves
1Tbsp Chili Paste
1Tsp Grated Ginger
1Tsp All Spice Powder/Garam Masala

Method:
1)In a mixing bowl, add all the marination ingredients except oil and marinate the meat for 4-5 hours or preferably overnight.
2)Heat 1/2 cup oil in a pan. To this add in the marinated meat and cook until the meat is tender. Set aside.
3)Now to make the gravy, heat butter in a saucepan. Saute the onion and tomato in the oil until translucent. To this add turmeric, green chili, ginger, salt and pepper and all spice powder and cook until well incorporated for bout 10 mins.
4)Leave the mixture to cool at room temperature. Place the onion mixture along with garlic and cashew in a blender and puree until smooth.
5)Place the creamy mixture in the same saucepan and bring it to a boil. Add in the cooked meat and simmer for bout 5 mins.
6)Top it with butter and serve right away with rice or roti.IMG_3938
