Broccoli And Chicken Pizza

While going through my recipe line, I realized there was just one recipe that called for making pizza from scratch. PreMade pizza base/frozen base are easily available at the grocery stores and we do not want to take the hassles of making pizza base at home. But, sometimes it’s good to put extra effort to go an extra mile and make the pizza from scratch for extra added flavor. IMG_5906

I love Broccoli and any dish that make use of broccoli. It’s my favorite green veggie. I feel Pizza Parlor need to include Broccoli Pizza in their menus as it is healthy and at the same time delicious too. Here’s my version of homemade broccoli and chicken pizza;IMG_5905
Ingredients to make the dough:
2-1/2 cups flour
2tsp instant yeast
1-1/4tsp salt
1tsp sugar
4tbsp olive oil
3/4 cup luke warm milk and water, 110

Other ingredients:
2 cups broccoli florets
Add the broccoli florets in boiling water, cover for 2 mins. Strain and pour cold water.
300grams chicken, julienne cut
1tbsp soy sauce
1tsp oyster sauce
Salt and pepper to taste
1tsp chili sauce
2 dashes of hot sauce
2tbsp butter
1 medium onion, sliced
2 cup cheese
1/2 cup ranch dressing
Chili flakes and Oregano

Method:
1)Combine all the dry ingredients including yeast for the dough in a mixing bowl. Mix all the ingredients together using a spoon and make a well in the centre. Add in the milk and water mixture. Combine it all using a spoon and then use your hands to bring the dough together. At this point you can add a little more water if needed.
2)Turn the dough onto a lightly floured surface and knead for 10 minutes or until smooth and elastic.
3)Oil 2 bowls with olive oil and set aside. Divide the dough in two pieces and roll into a ball. Place each ball of dough into the oiled bowls, seam side down and brush the tops of the dough with a little oil to stop them from drying out. Place a piece of plastic wrap on top of each bowl and place the dough into a warm place. Inside a microwave or an oven (oven turned off) works best for 1-2 hours.
4)Marinate chicken pieces with soy sauce, oyster sauce, hot sauce, chili sauce and salt and pepper. Let it sit for for sometime.
5)Melt butter in a saucepan, add the marinated chicken pieces and cook until color changes and water from the chicken evaporates. Add in the onion and cook for another 2-3 minutes. Do not overcook the onions. Add the broccoli florets and turn off the heat.
6)On a floured baking paper/foil roll out the pizza dough into large round or whatever shape you desire (it need not be a perfect round). You need about 1/2 inch thickness. 7)Spread 1/4 cup ranch over it. Sprinkle chili flakes and oregano. Scatter 1/4 cup cheese. Top with broccoli and chicken mixture and then scatter another 1/4 cup cheese. Lastly, sprinkle chili flakes and oregano. Repeat the same with other pizza dough. Bake in preheated oven at 180C for 25-20 mins or until crust is lightly brown. Serve right-away.
You can freeze the other dough for later use if you don’t want to use right away. Or you can use it to make other flavored pizza.
